The weather is getting colder and we’ve started to drink fuller bodied wines so we decided it’s time to start making Pumpkin Ravioli again.
These babies are fresh from scratch. It all starts in our kitchen with the filling… made from roasted whole pumpkins, combined with amaretti cookies, homemade mostarda di cremona (for those non-foodies that’s a fruit mustard), breadcrumbs, and romano cheese. We then stuff the filling into our house-made pasta sheets and serve with our homemade walnut pesto sauce.
